Turmeric is a bold and flavourful spice and the name of th newest release at this culinary inspired condo community! This 72 unit 6-storey building stands proud of the heart of Bistro 6, just steps to the Basketball Court and Community Gym. While the flavour of the spice Turmeric is delightful, it’s colour is just as remarkable!

The unique architecture of this building features rich areas of golden colour accented by a metal roof that mimics a kitchen range hood. This building offers several one-bedroom opportunities and suites with a view of the environmentally protected land – starting in the $400’s.

Turmeric Spiced
Golden Beet Soup

WITH PICKLED RED ONIONS & CILANTRO

FOR THE SOUP

2 tablespoons olive oil or avocado oil

1 large shallot, chopped

4 cloves of garlic, thinly sliced

1 teaspoon salt

1 ½ lbs golden beets, cut into 1” slices

4 carrots, sliced

big pinch of chili flakes

1 teaspoon dried turmeric powder

½ teaspoon paprika

½ teaspoon cumin

¼ cup raw cashews

5 cups of broth, of choice

juice of 1 large lime (or 2-3 small limes)

GARNISHES

Pickled red onions (recipe below)

Lime wedges

Fresh cilantro

PICKLED RED ONIONS

¼ cup red onion, finely diced

2 tablespoons red wine vinegar

1 tablespoon water

¼ teaspoon salt

Instructions

1. Preparing Red Onions: Combine all ingredients for the pickled red onions in a small bowl and make sure the diced onions are submerged in the pickling liquid. Set aside on the counter or in the refrigerator while you make the soup.

 

2. Heat the oil over medium heat in a large soup pot and add the shallots, garlic and salt.

 

3. Sauté for about 5-6 minutes, stirring occasionally until translucent and soft.

 

4. Next add the beets, carrots, chili flakes, turmeric, paprika and cumin. Cook for another minute or so, stirring frequently until spices are fragrant and start to stick to the bottom of the pan.

5. Add the broth and cashews and scrape up any brown bits from the bottom of the pot.

 

6. Cover and simmer for about 25-30 minutes – adjusting heat if necessary to maintain a strong simmer – until vegetables are soft and cashews are plump.

 

7. Pour soup into a blender and blend until completely smooth but don’t overfill – you can blend it in batches if necessary.

 

8. Season to taste with salt and lime juice of 1 large lime (or several small) 9. Serve topped with pickled red onions, fresh cilantro and lime wedges.
